The Level 4 Award in Managing Food Safety has been designed as a 5 day programme to provide an in-depth understanding of food safety with an emphasis on the importance of the management of systems and staff.
It is important for everyone in a managing or supervising position to have mastered the principles of good practice in food safety, thus gaining the ability to guide and advise on the management of food hygiene in a food business.
The Level 4 Food Safety course is designed for owners, managers, trainers, supervisors with Level 3 Food Safety knowledge and those who monitor and audit food safety systems.
Course Objectives
Successful completion of the Level 4 Managing Food Safety training programme, assignments and examination will ensure candidates are able to:
- Guide and advise on the management of food safety in a catering business
- Contribute to the management of food safety in a catering business
- Identify further technical knowledge necessary in food safety management procedures
- Determine further training requirements
- Identify areas for legal compliance
- Determine good practice
- Design an improvement plan
- Outline a HACCP-type plan
- Promote and encourage good standards of food safety
- Liaise with enforcement officers
- Deliver level 1 and 2 food safety training (with appropriate training skills).
Course Agenda
The Level 4 Managing Food Safety qualification will cover the following topics:
- Bacteriology
- Food-borne illnesses
- Physical contamination of food
- Food storage, temperature control and preservation
- Design and construction of food premises and equipment
- Cleaning and disinfection
- Pest control
- Personal hygiene
- Training strategies
- Legislation
- Management control techniques
Assessment
The Level 4 Managing Food Safety course requires candidates to submit two assignments from the list set by the CIEH. The required standard of 30 marks must be achieved in each assignment before the candidate is eligible to sit the examination.
The examination of the Level 4 Food Safety course will consist of an examination paper with 2 parts. Candidates will be given 2 1/2 hours to complete this.
The final mark is made up of marks achieved in both the written examination and the assignments. Candidates must gain at least 60% in the written examination and an accumulative mark of 60–74% to achieve a pass, 75–89% and above to achieve a merit
and 90% and above to achieve a distinction.
Suggested Progression
Train the Trainer qualification. This will allow candidates to deliver the Level 2 Award in Food Safety.
